This cake was created for my brother who retired from GM. His dream is to own his own restaurant. The Pineapple upside down cake in the over represents our mother who passed 2011...I know she would want to be there so this was my way of adding her in. Every Christmas she would make us a pineapple upside down cake and there were 4 of us. We would each take a corner (as those were the best parts)...and leave her a "cross" on the counter as that's what it looked like when we all got our slice :-). It was a logistical nightmare as I shipped all the cakes and supplies to Michigan and decorated the cake in my Hotel! All edible except furniture.
