Goliath on Cake Central

This is by far the biggest cake I have ever made. The base is 18 inch cake. Triple layers. Three tiers with the fourth on the side. It was a gluten free and it could not be put on the top as the rest of the cake was not gluten free. Each tier was a different flavor, from chocolate, almond, to a finish of a fruit flavor. There are over 70 hand rolled chocolate roses, and 91 woman hours into this cake. My son made the wooden cake dividers. They were health inspected for health concerns. Wooden dowels were inserted to keep all weight off of each tier, so there is no weight bearing on any cakes what so ever. This cake fed over 500 people. We brought the cake in on tier at a time. Set up time was just a little over an hour. The fondant is home made with a a butter flavor. A white chocolate ganache was used. This was a a fun cake to make.
