Wedding cakes for a good friends wedding. This was my first crack at the naked cake. It was a destination wedding, in a camping style venue. I was going to be making a lot of the product on site, and assembling it there, so naked cake was the way to go.
Each tier was a different flavor buttercream, decorated in fresh ingredients to represent the flavor. Bottom tier of the white was blueberry, middle tier pistachio, top tier lemon. Bottom tier of chocolate cake was blackberry, middle tier raspberry, and top tier strawberry. Each flavor was made from scratch with fresh berry compotes and purees, mixed into Swiss meringue buttercream. 220 servings.
