I made this cake for my Grandmother's funeral reception which more or less resembled a wedding reception hence the stacked cake. I made it in the space of a week whilst arranging the funeral so it was quite a rushed job and I was a little stressed at the time, however I am happy with how it turned out and most importantly I am sure my Gran was smiling down in approval-she never did anything by halves so I am sure would have liked all the pomp and cicumstance and having a big cake to celebrate her life and passing :) The bottom tier was rich rum fruit cake and the 2nd and top tiers vanilla sponge with white choclate ganache and raspberry conserve and the 3rd tier was chocolate mud cake and dark chocolate ganache.
