Petit Fours
Here are some of my simple petit fours (simple as opposed to fancy because they are not layered and filled...single layer of white cake; then vanilla-almond buttercream; then the poured fondant. I have to do 600 of these for an event in May; so I timed myself to see how long it would take to pour that many. I was able to pour 9 dozen in 1 hour and 10 minutes! Not bad! If I had more cooling racks it would go faster!

Wow you've got your work cut out for you! I love them!!! Oh how I wish I had the right equipment at home to be making these again!!! Yours sound yummier though!!!!! LOve the squiggles too!!!!

I don't know Becky. I've never frozen them because I assume the fondant will get soft. I do have some in the freezer now to see how they do.
is that a really thick pur icing? I can't find a recipe for one that is very thick. Would e-mail me that recipe? Or tell me where I can find one simmaler?
It's really not thick! 2/3 cup water, 3 TB karo, 2 lbs. conf. sugar, 1 tsp almond extract. But there is a layer of buttercream on the tops underneath; which might be what makes you think the poured icing looks thick.
