This santa head is completely edible - He is first sculpted of vanilla cake with strawberry filling - this his face was sculpted separately with sugarpaste, adhered to the head and then covered with fondant "skin" - finally all the details were hand painted/texturized to make him look authentic and real :-) He was a hard one to want to cut into !
