Christmas Tree Cake
I wanted to make it a bit of a challenge so I decided to make an outdoor tree and include the trunk in the design. The tree itself is almost 2 feet tall and is a stacked and hand-carved chocolate cake with chocolate ganache. The foliage is made from green modelling chocolate. The ornaments are a combination of dragees (baubles), piped royal icing (candy canes, snow flakes, hearts, snowmen, penguin, small stars) and modelling chocolate (gingerbread men, holly leaves). I made the star on top of the tree from isomalt and the 'tinsel' around the tree is spun sugar. The presents under the tree are vegan, gluten free vanilla cakes covered with vegan sugarpaste. To finish the whole thing off I added mini fairy lights to the tree.
