For my son's 5th birthday party. Chocolate cake with buttercream filling. Sand is graham cracker crumbs mixed with light brown sugar. Wilton cake turrets are covered with RI and rolled in "sand". This isn't as clean as I'd hoped, but the guests were all happy with it.
