This cake was made for my mother in law's birthday. She's loves black jack to no end and being the thoughtful daughter in law that i am. I surprised her with this cake the day after her birthday since i messed up twice. Never baked with splenda before it was a challenge. This is a ginger cake with guava buttercream frosting. Sounds like an odd combination but it came out tasting better than i expected. Needless to say, the mother in law was very please and really love the cake. That's all that matters.
