This was for a dear friends mom's wake. It's a 2 layer coconut cream cake with a fresh coconut icing that consists of a sour cream/whipped cream base. As you can tell it doesn't smooth well because of the coconut and because it melts rather quickly, but after sitting in the fridge on the cake it gets more stabilized. Delcious cake...just doesn't always look the best :D)
