Icing A Wedding Cake With Fondant
Decorating By mbaliza Updated 26 Oct 2005 , 8:49pm by MissBaritone
Hie all,
This is my first time icing a wedding cake. I have baked the fruit cakes and I intend to ice them with fondant. I have a few questions:
1. what can I use for filling the 2 layered cakes?
2. Before I put the fondant, do I need to something else to make it smooth?
Thanks
I'm not sure what type of filling really tastes well with fruit cake, so hopefully others with more experience in that area can offer you some advice. As far as the fondant, I put icing (I use buttercream icing) on my cakes and smooth it really well before applying the fondant because fondant will take on any flaws you have in your cakes. Hope this helps!
I am not sure of a good filling for fruit cake (have never made one).. but what about just using buttercream as a filling?.. or some type of jam/jelly?
I have never heard of putting filling in a fruit cake before. I would think the fruits in the cake would be enough. Filling the the cake would be overpowering.
Marzipan and royal icing is generally used with fruit cakes. But I think what you would do is use bits of fondant to plug any holes you have. Then once the surface is smooth. Brush on a thin layer of apricot glaze then apply the fondant.
Looking forward to Seeing additional suggestions.

Edit
P.S. I forgot to mention I dont Think buttercream would go well with fruitcake either.
It is not normal to put filling in a fruitcake. The cake is normally brushed with apricot glaze. covered in marzipan, then covered in either royal icing (or more commonly these days) fondant. This is the norm for wedding cakes in England. If you have any questions please feel free to pm me
