Questions About Fondant Etc....

I have a project in March for an anniversary. I was asked to do a 2 tiered cake covered with fondant and fondant accents, pearls and chocolate roses.

I haven't worked with fondant and candy clay before. I only finished course 2.

I have gone through some websites and read threads about fondant but still not confident about it. It should be easy but I don't know where to start.

Should I go ahead and buy satin ice instead of doing my own MMF? I heard satin ice is good.

Also, how far in advance can I make the fondant if I'm making them? How much can a 10" & 7" round cake needs?

I know a lot of experienced and experts are out there... please help me go though this project with more confidence.

You have time to play around a bit before March. Go ahead and buy some Satin Ice and do a practice cake. Then try the MMF and see which one you like working with better.

I agree that you should have some Satin Ice in reserve just in case. But, you do have time to play with it. 2 batches of MMF should be fine to cover the cakes.

Definately buy and/or make some before you commit. For some the stuff is easy, for others, they'd rather jump off a bridgeicon_wink.gif
I love the MMF (marshmallow fondant). One batch, per the recipe from this site, would be enough to cover your 10 and 7 inch cakes.
Satin Ice is not a bad tasting store bought fondant.
Oh yeah, mmf lasts for several months on the shelf. It does not need refrigeration.
If you go to baking911.com, there are some good tips about the storage of fondant.

I, too, was hesitant about working with fondant, and I did complete Wilton 3, but fondant is so much fun! I can't believe I was freaked out about it. Here's my thought on it.....if you've ever played with Play-doh as a kid, you can do fondant! Go for it!
