I am very new to cake decorating and have fondant questions. What are the differences between store bought (mainly wilton premade fondant) and homemade mmf. Is one easier to work with than the other? Are the textures that different? Once you make fondant how long is it good for and what is the best way to store it? How far in advance can you put it on a cake and again what is the best way to store it once it is covered.

I don't work with fondant much, but I will answer as many of your questions as possible
Wilton Fondant does not taste good. MMF tastes better, but I found that it takes practice to get the consistency right. I buy Pettinice brand fondant I like the flavor and it is very easy to work with. I know a lot of CC'ers really like Satinice brand fondant.

If you store it properly fondant can last for a few months. The store bought can last from 6months to a year. I store mine wrapped in plastic then in a ziploc bag, then I place that in a plastic container.

I have put it on the day before I need it, because I have found that it starts to get hard after 3 days. I don't use fillings that need to be refridgerated in a fondant cake. Some fondant you can freeze and put in the fridge.

There are subtle differences between the various ready-made fondants and the many recipes for home-made fondant.

If you are new to fondant, Wilton is a good place to start. You can get the feel of the product, so when you make your own, you know what you need.

Most fondant can be refrigerated once it is on the cake. However, bright colors or complex decorations can get condensation, if the cake is removed from the cold to a warm room.

Fondant can be store, very carefully wrapped for weeks, even months. However, it can dry out if it exposed to any air.

Thanks for the help. I don't have access where I live to anything but Wilton fondant. Where is the best place (cheapest) on-line to get fondant like satinice. Along those lines where is the cheapest place to buy most cake supplies. I am new at this and I am mostly doing cakes for fun and not charging so it is a lot of money out of pocket.

Welcome to CC, Natt. I use MMF, and have never used commercial fondant, so I can't speak to the products, except for what others have said...so, MMF is cheap and very easy to use and to store. If you buy a batch of Wilton you'll get the idea of the consistency needed, then give MMF a try. Good luck with your cakes. It's a wonderful hobby.
