The last stacked cake I did ended up not being sturdy enough and leaned slightly to one side - now I have an order for another wedding cake from the same family of the aforementioned cake...they like my cake, lol...I just am terrified it will lean or worse topple over this time....help! Should I use the hidden pillars (which I know nothing about) would that be sturdy? Also, someone recommended I drive a center dowel all the way thru the cake with a tack hammer ( new to me) what are your thoughts/advice?

Here is a link to some instructions on a stacked cake. The hidden pillars are relatively wide tubes that are inserted into the cake. They extend above the top of the layer, leaving a space between the tiers. this look is good for many designs.

I have used large straws and the plastic tube dowels made by Wilton, and I like both. The center dowel is a sharpened wooden down the inserts at the top, and goes through to the bottom base of the cake. If you are transporting more than two tiers, it can be helpful. It is generally not necessary with two stacked tiers, provided than actually stack together. Hidden pillars will allow assembly on-site.

When I make wedding cakes 2 tier up to 8 tier, I use atlease nine doweling rods per tier with royal icing inbetween and Ive never had a problem... But i guess it also depends on what icing you have used. If you use buttercream i guess it would be different.

Ive never done a tiered cake out of butter cream before but since being on here that is going to be my aim.Im going to make a 3 tier cake in butter cream...When the wedding season quiets down I will have a go hahahaha for a bit of a laugh I guess...

I usually use 6 dowels in each tier and if it is just 2 layers and the cake is not going far I do not dowel all the way through. If I am doing more layers, I DO dowel all the way through. It may be best to dowel all the way through just for peace of mind.
