forgive me for my ignorance...but how do you do the topsy turvy cake with wedges? I'm not seeing it in my mind. So any directions would be appreciated.
I have made one with the carving directions but that is a waste of alot of cake and I would love to do one for an upcaoming bridal show.

From what I have gathered from previous posts and reading the tutorial, you have 3 cakes of different sizes (lets say 6" 7" 8") for one tier. The 6" will go on the bottom, then the 7" cake. Torte these as you normally would. For the 8" cake, you torte at an angle, with the knife cutting from the top edge to the bottom edge (basically at a 45 degree angle). Then take the 2 layers, fill, and put the 2 large ends on the same side (to give you the tilted look). HTH. The tutorial on here has picutres if I dont make sense! ![]()
I started my first topsy-turvy cake last night. All my excess goes to making cake balls. That would be perfect for a bridal show. They get a chance to sample with the cake balls and see your beautiful work. I am not sure about the wedges though, sorry.
I use VERY stong Styrafoam wedges between tiers. You can put wooden dowels straight through them or even around them. I have never used this technique on a very large cake. But I would assume there are harded things you could use and dowel around them.The only downside to this I have found is hiding the wedges. ![]()
Check out the collete peter's book I am not sure what is called i think it shows very good instructions for topsy cakes there
