Mmf- Finally A Taste Combination I Think I Love

Well, after playing around with several batches of mmf, I think I finally put tpgether a flavor combination that tastes really, really good. I always thought mmf was too sweet, but I what I've put together is awesome. Just wanted to share this. If anyone tries this please let me know what you think. Here's what I did:


Using the typical mmf recipe, I added 3 tsp lemon juice (fresh or bottled). This helps to cut back on the sweetness. I also added less than a pinch of salt (cuts down on sweetness) and then added 1 tsp vanilla and 1 tsp lemon extracts.

The taste is wonderful. Very fresh taste, can't describe it but it's good.

Just wanted to share!

I didn't know you could add all that stuff. When I made it once I just melted the MM and added the powdered sugar. I'll have to try this out.

I made some banana flavored once and while very sweet it was a hit with the kids at the birthday party! It tasted just like a Laffy Taffy candy.

The last batch I made I added the Loranne Coconut flavor. I really liked that. It tasted very good especially with my Italian Cream Cake.

That sounds great! And the banana sounds awesome, I used to make special trips to the gas station for banana laffy taffy!! Just a kid at heart! Ha!

Thanks for posting such a helpful tip! icon_biggrin.gif I was just wondering... I do not have any lemon extract, will it ruin the flavor to leave that extract out and just use the vanilla, salt, and lemon juice? icon_confused.gif

Chen, I've never used lemon juice in my MMF and I think it tastes pretty good as does my family. I think the reason the lemon juice was mentioned and added by rhopar33 was in order to cut down on sweetness yet leave the MMF flavorful. It's not a necessity.

MissRobin, so glad you tried it and so glad you liked it. I thopught it was good, too. Now I can finally decorate with mmf and feel confident my clients will like the taste and won't find it too sweet.

No, it won't ruin the flavor if you leave out the lemon extract. You'll still get a great taste that's not too sweet.

Glad to hear you liked the taste after adding the lemon extract. It really does make a BIG difference in taste.

I am definitely going to try this. I'm not a big fan of eating fondant and always wonder what others might think of it, so this might give me the best of both worlds--eating and decorating. Thanks for sharing.
