Have any of you ever been asked to do pies? A lady at my husband's workplace has sent me a request for a coconut pie and a chocolate pie. That is all she said.
I don't really do pies, but told her I could if she would give me some suggestions on what she would like and I could try to test them out before Thanksgiving. But coconut and chocolate are not very descriptive. That could mean anything. I am assuming (but we all know what that can mean) that she means a coconut cream pie and a chocolate cream pie. She usually buys her pies at a local Family restaraunt. I hate to keep emailing her back and forth. But I thought I was descriptive in my explaination asking for her to give me some suggestions. Maybe it just doesn't matter to her...she will take anything as long as one is coconut and the other chocolate.
Also, how much do you charge for a pie? LOL
I know I can figure this out...just thought I would throw it out there.

I would do the pies as you know them to be.Coconut cream with whipped cream topping sprinkled with toasted coconut.Chocolate cream pie with loads of whipped cream on top and shaved chocolate.I think that is probably what she means!!Local restaraunts wouldn't be especially eloborate anyway!
The first thing that comes to mind is meringue pies. I have an excellent recipe for a meringue pie if you want it. The filling always sets and the meringue is really high. I use a piping bag with a big star tip to put it ontop of the pie filling.
Do the same for pies that you would to figure out the price. But I would charge anywhere from 15 to 20 for them. Find out what the prices are from the resturant where she usually buys if you can and go from there.

At thanksgiving time I always make a coconut custard pie that everyone raves about. Maybe she would like that.

When I make coconut cream pies, I put meringue on top....I tried it with whipped cream, and it just wasn't the same for me.....all that to say, maybe it would be better to get all the details, because what could seem little to someone, might be a big deal for another ![]()
I've never had coconut pie with out meringue...i dont think i'd like it with whipped cream!

These are the descriptions from the bakery where she normally gets her pies:
Coconut Cream
Shredded coconut in a vanilla filling, topped with whipped cream.
Chocolate French Silk
A delicious blend of creamy chocolate, eggs, rich butter and sugar. Topped with real whipped cream and dark chocolate curls.
I went out on the internet last night and found some recipes that sounded similar to this.

it is one of those fabulous volumes that has loads of recipes AND lots of editorial about why certain methods work, or fail, etc...the kind of tips you generally only find on fab sites like cakecentral.com. ![]()
