I'm taking a Wilton cake decorating course, and my assignment for tomorrow is the bring in one recipe of royal icing divided and colored. My recipe says it should produce 3 cups, but I only ended up with 2 cups. I followed the recipe exactly...1 lb powdered sugar, 3 Tbsp. meringue powder and 6 Tbsp. lukewarm water. It is so thick, I can barely stir in any color. I used my kitchen aide mixer and mixed for 10 minutes. Can someone please tell me where I went wrong?
Try adding a little more water, a teaspoon at a time, to thin it. If it is to thick, you won't be able to pipe with it!
Royal icing is easy to make but difficult to give quantities for. The amount of icing sugar really varies from batch to batch and you have to go be the feel and consistency of it. As as been suggested above add a little water and beat in well until you get the correct consistency. If it goes too thin don't be scared to add some more icing sugar until you get the right consistency. The other thing is to make sure that you really beat well in between each addition of sugar as it will go really stiff when you first add the sugar then does slacken off a bit as you beat it.
You did not do anything wrong. I myself made the recipe and it did not produce 3 cups. I went in to class all worried and the results were the same for the other ladies.
I would not add more water to The recipe you will end up with soup.
The next time I made a batch I increased the sugar and the meringue powder.
