
Hi everyone! I am working on a vegan fondant recipe and I'm wondering if anyone is interested in it. I haven't fully tested it yet, but so far the results are great.
I had been having issues with the gelatin and corn syrup in my original recipe. The gelatin was partially dead leaving funky lumps in my fondant and making it impossible to use. The corn syrup companies have added so much water to the syrup that it's almost useless. This led to me wanting to find a solution. I did find some vegan fondant recipes online, but I did not have all the ingredients and I really didn't want to go on the hunt for one of them not knowing if I would ever used it again. I was able to develop a recipe that is easy to make and takes a lot less time to make than traditional fondant.
If there are some in the cake world that would like this recipe when I'm positive about it, please let me know. If the interest is low, then this will be the only post about it. I'm good either way.

hi michele-- i am no longer doing cakes or even eating much cake these days because it goes into 'storage' mode if yah get what i mean hahaha -- but i wish you the best with it!!

I know longer make my fondant anymore. Too hard on arthritic hands. I buy a commercial brand from a local cake decorating supplier. I very rarely cover a cake in fondant, because most of my friends and family prefer straight buttercream. I only use fondant now for accents on a cake. And I don’t have any vegan friends or relatives wherein this would be applicable. Thanks for the offer though. Kind of you.

I only make competition cakes and I hate fondant work. But fondant works best for these cakes, so I keep trying.

I am so sorry to take so long to respond to this. Soon after I posted, my husband got a new job that required moving. Then if course there is fixing up the house to sell, selling it, and looking for a new place to live.
Vegan Fondant
½ cup water 2 Tbsp. shortening
1 Tbsp. corn starch 2 – 2 pound bags powdered sugar
½ cup light corn syrup 2 tsp. tylose powder
1 – 3oz. package liquid pectin ¼ tsp. preferred flavoring
Dash salt Extra powdered sugar for kneading
Using microwave safe measuring cup add water and starch; stir until fully mixed. Microwave on high for 2 – 30 second intervals, whisking between each time. Add shortening; whisk until melted, continue whisking very often while cooling to prevent lumps. Allow mixture to cool to approximately 100F/38C. Combine liquid pectin to corn syrup to water/shortening mixture. Add 1-two pound bag of powdered sugar into stand mixer bowl. Add the tylose and mix on low to combine.
Once the liquid has cooled, strain into the powdered sugar mixture. Liquid MUST be strained. Using the mixing paddle, mix on low speed until combined. Scrape down the sides. Add powdered sugar in 1 cup increments; mix on low until fondant is not sticky.
Have a kneading area ready. Dust the surface with powdered sugar. Remove fondant from bowl, dust powdered sugar over fondant and knead until moderately firm. Wrap kneaded fondant in oiled plastic wrap; wrap again, then store in Ziploc bag. Allow the fondant to rest at room temperature for 8-12 hours. Makes approximately 5 pounds.


It's sad that this site is not used as much as it should be. However, someone stole my FB account and I cannot log in at all. FB keeps sending me notifications that my account has been flagged and I have 180 days to remedy the situation. Since my email was changed by the thief, FB reporting programs tell me that that email doesn't exist in their system. It does seem to exist on their email list.
