You have said on many occasions that using butter in scratch cake recipes makes the cake feel dry .  I’d like to quote you in replies on other forums:)  can you write it again as I cannot find it buried in a recent post.

sure -- i did a test where i put a slice of cake made with butter in the fridge and compared it with the slice that was never in the fridge -- the fridged slice of cake was allowed to come back to room temp and felt 'dry' because it now scratched down the back of my throat -- however it really wasn't dry because you could put it in the microwave and it was as lovely as ever -- it was because the butter did not relax back to room temp unless heat was added --
