I remember learning before and reading somewhere but can't seem to remember if I want to add in some liquid other than what is in the recipe to subtract something. I want to add in some cherry juice to a recipe would I just substitute the vanilla extract for this or do I add in less of something else?

substitute however much  cherry juice for the same amount of whatever liquid is called for --

 Yes, for instance, if you recipe calls for 1 cup of milk and it requires about 1/4 cup of cherry juice to achieve the desired flavor, substitute 1/4 cup of cherry juice for 1/4 cup of the milk, leaving you with 3/4 cup milk.
