Hi everyone hope you are having a wonderful day. I’m making a belly cake for a baby shower on Saturday. Has to be vegan or just eggless I’ve never made a vegan cake and have attempted 3 different recipes I’m so stressed as none of them turned out well. Sticky in the middle one and the other is so soft and crumbled would never hold up with fondant. Please please help

Have you tried this recipe? It’s been over 25-30 yrs since I made it so I don’t remember much about it. As for the one sticky on the middle I’d say it wasn’t baked enough... but that’s a guess.

This recipe is very watery, but bakes up well. It is also very moist. I've always made this with gluten free flours.
I used this for my son's Corona beer bucket cake and it held up well under the fondant after I covered it in ganache.

- 3 cups gluten-free flour blend (see below...you can also use regular flour if you can have it)
- 2 cups sugar
- 2 cups cold water
- ⅔ cup vegetable oil
- ½ cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 2 teaspoons white vinegar
- 1 teaspoon salt
- 1 teaspoon pure vanilla extract
