Hi so I froze my cupcakes for like 3 days amd then unthawed and decorated and they are dry!! The cake is dry. I'm confused. Has anyone else froze their cake and how did it turn out?
I always froze my wasc cakes -- were they tightly wrapped while in the freezer -- did you try them before you froze them? if it's white cake -- uber easy to over bake --
I triple.wrapped my frozen cakes and yes, like you, I only froze them for a few days --
I have never had mine be dry. How long did you bake them? Cupcakes take only 15 minutes or so Then Pop them into a plastic bag for freezing.
Freeze it all of the time. If anything, it comes out even more moist.
I rarely make cupcakes, but freeze my WASC cakes all the time with no problem. Actually, right now I do have chocolate WASC cupcakes frozen. They've been in the freezer for about six weeks in Tupperware boxes and they are just fine. I usually wrap my cakes in a double thickness of plastic wrap and finish with a layer of aluminum foil and they stay fresh for months.
