Hi! I got a request for a 2-tier cake today. My client wants a 5” tres leches sponge stacked on top of an 8” chocolate cake. She wants the tres leches coated with whipped cream while the chocolate cake with whipped cream or buttercream. Is it okay to use two different frostings on a two tier cake? Is it also okay to use whipped cream on both cakes? It’s like summer everyday here, and I’m worried stacking whipped cream cakes will result in a mess. Although I have made countless 1-tier whipped cream cakes and transported them via car with no damage/melting. Thank youu!!
i do not prefer whipped cream for icing a tier cake -- gotta keep it cold -- but you can certainly use different icings but you gotta get the decor to balance it out -- could look odd -- idk
This sends up two red flags for me. First of all - and I've never made one, just read the recipes, so honestly don't know - isn't a tres de leches cake too moist and fragile to be stacking and transporting? Second, whipped cream would be susceptible to spoilage and melting unless kept chilled at all times. I would try and talk the client into a different type cake for the top tier and use buttercream or ganache instead of whipped cream frosting. A nice Swiss Meringue Buttercream is more stable than whipped cream and lighter and less sweet than American Buttercream. So is an Ermine frosting.
to my amazement some people do tres leches tier cakes -- the ones i've had and the one i made would Never hold up out of the pan -- so clearly they know something i don't know
-K8, it has to be a different kind of cake. The recipes I've read, the cake is actually soaked with the milk and requires remaining in the pan. They sound delicious, but not what I would ever consider stacking.
