Good morning! 

My son has requested a “nacho” cake, as in a plate of nachos. For the cheese, I want to make it like the liquid cheese rather than shaved fondant or modeling chocolate for like shredded cheese. 

So I was thinking of either dying white chocolate, or royal icing and spooning it over the nachos. Which one would you suggest? I don’t think I want to do orange candy melts- I don’t think the orange is vibrant enough for the cheese color, unless I can add more orange color? 

Any opinions? I am thinking of getting supplies this weekend.

I get the feeling you are in the UK so the use  of royal icing probably would work but  I’d be more inclined to use candy melts — mostly for better taste.     Color wise melts need powders colors or the special candy gel.  If you have any on hand fine but if you have to buy some U need to consider if you’d use that again     Hope this helps

you can add orange powdered color in the choco -- or buy candy food color made especially for choco -- i think the choco would be easier to make look like cheese but royal would surely work too -- just be ready to jimmy with the consistency -- add water to the royal -- add oil to the choco --

I would definitely use melted chocolate or candy melts.  I've used the orange candy melts and I think they are much brighter orange than sharp cheddar.  You may not need to add any color at all.Nacho Cheese

Sorry I was out earlier and couldn’t respond back. Thanks for your input! What my earlier reply was saying, though cut off was that I didn’t know there was powdered coloring or candy specific coloring. I only have some gels. Sandra- that orange does look bright enough! I was afraid the candy melts would dull in color when it dried, but yours didn’t seem to. But I am not that experienced with them and can never seem to get a good consistency. I ended up getting a premade Royal icing from Michaels because I know how to thin that out. My son said he doesn’t want white chocolate, lol. I can pop back over to the store and get some melts. They are not expensive and maybe I can make both and decide. I am making the cake on Tuesday.

Macpac09, it seems to me that the Candy Melts intensify in color when melted.  They almost seem to have a patina, which makes them appear dusky, when you buy them in the pack, but that disappears when they are melted and it does not return.  I've found the same thing with the red and green colors.

I just pop them in the microwave for a couple of minutes, depending upon how many I am using.  If only a small amount, start with 30 seconds.  Remove and stir.  If needed, microwave for 30 more seconds, then stir thoroughly.  Repeat until they are nice and melty when you stir for the last time.

I want to thank you ladies for helping me. I finished my sons cake a little bit ago. Started after work and wanted it for his birthday tomorrow. I ended up going with candy melts and I think it did work out just fine! I hope he likes it!
