Hi y'all,

Over a year ago I posted looking for help as I'm super new to scratch baking and ended up pouring royal icing on a cake.

Thanks to some kind and encouraging words here I came back to show some homemade ermine frosting decorating I did on a recent cake after some time studying up on frostings.  I most recently piped out a small rose bouquet on the gray cake I'm super proud of.

I'm also looking to venture into learning other frostings that are not the standard buttercreams as the ones I make cakes for are not huge buttercream fans. Something pipeable and light in ssugariness.

Any recommendations for new types to try, such as a whipped cream frosting, as you look at my progress?

Unfortunately, we can not see the picture of the cake you are so proud of! As for a buttercream suggestion, you may want to give a try at smbc (swiss meringue buttercream). This type of buttercream is not as light and airy like ermine frosting is, it's more heavy/buttery. It's not yoo sweet, silky smooth and a dream to pipe with.

You can always use royal icing for piping too.
