Anyone know how long the new sugar sheet technique lasts once on the Cake? Want to know if I can  apply the day before and how long will it last once on the cake?

I have not yet given it a try, but I am guessing it can be unstable, as is other sugar work.

I have a couple of tutorials for making a sugar sheet. One is “baked”, so I think the sugar sheet would be very stable. Now, that being said, I would think because sheet is sugar, if placed on a cake, and the cake was in a extremely hot/humid environment, there is the possibility of a problem. I suppose the sheet could soften, then maybe droop?? Of course, that’s pure speculation. In your case, I think putting the sugar sheet on your cake the day before, I can’t see any issues.
