Good morning ! 

I'm currently making an Aston Martin cake and really want to get some detail in there. After I've roughly carved I would like to cover in gnache and carve some more detail. Will gnache last a week while cake is completely covered in sugar paste ? Also will it set hard enough in the fridge for me to do that ? I've always used just as a filling. If not, any ideas ?

I would use modeling chocolate to make the details.  It can be added before or after applying the ganache.  I would probably do it after.  Finish forming the shape with modeling chocolate, then cover with fondant.
