Hello! this is the first time i am doing this.
I will be doing a wedding caker in the summer (warm in the UK) it will be a large 3 tiered cake for 100-150 guests. However the bride really wants to be ablew to cut through the whole cake. Any suggestions as to how i can stack this cake without using cardboard? Will dowls hod the whole cake? Or am i going to have to dowl the bottom tier and have the middle tier and top on card?

Your bride has no idea what she is talking about. You absolutely must have support dowels and cake boards between each tier. No compromise! To serve, start with the top tier and work downward or unstack the tiers prior to cutting.
A weird thought just pass thru my weird brain........maybe you could cut a slice from the cake boards and somehow indicate to her that they must cut the cake at that point.....BUT then on 2nd thought........it probably would weaken the whole thing as the boards would not be as supportive.......so probably forget this and just think of it as a bump.
Unfortunately emz94 this is not possible. Without cake boards in between your cake layers, your cakes will fall into each other. You need to explain this to your bride. Only other option is a double barrel cake. For example, 10” stacked. So five 2” x 10” cakes stacked with many dowels in place. But many double barrel cakes can have cake boards in between as well.
