Couple of question.
How long can fruit filled cakes sit in ac? I make combination of smbc and American buttercream how long can that set out also.
Do you allow the guest to cut the cakes?

I would think fruit filling would make the cake fall into the category of 4 hrs Just advice client of the “rule”to keep it friged what they do is out of your hands Never used smbc If I’m serving I serve I did do a wedding where we did 10” hart cakes w/plan to have 1 person cut for the table
