Looking for tips/tricks for working with icing made with avocado instead of butter. My daughter is allergic to dairy so butter is out and allergic to safflower and sunflower oils so that takes out dairy-free butters.
It appears runny and green online (she's also allergic to Chocolate), is there a way to make it more stable and has anyone tried to naturally change the color?

if it's been done, there will be a recipe online. Have you tried the 7 minute meringue icing? We never ate anything but that growing up, as our parents could not afford butter.

Never heard of avocado icing. Can’t imagine it tasting very good. I have two recipes for no dairy/vegan icing. I use aquafaba (chickpea liquid). I do doctor by adding some meringue powder and some icing sugar. Helps icing pipe and crust.
And I also make cooked flour icing using all shortening replacing the butter.
Both recipes have been liked by my family (big critics) and my vegan friends.
I have never made avocado frosting, but I know I would love it! I love anything with avocado!
