I have a cake that will be picked up Friday morning, for a Friday afternoon/evening party. Customer wants vanilla funfetti, with a strawberry filling. I was going to make a strawberry reduction, but now I'm concerned about making it this far in advance. I want to stack and fill it Wednesday morning and keep it in the fridge until she picks it up. Will the fresh reduction be ok in the fridge for 2 days? Should I make a jam instead?

I would — use jam I mean   Since I have made/used reductions I really can’t get say if it would be safe but you’Re talking some 50-60 hrs   There’s no way to be sure it will be frigid once out of your hands   I would not take the chance   My choice would be to use something like Smuckers simply fruit
