I know Lemon cake of course, and I make a Duncan Hines Strawberry box cake with Betty Crocker Lemon Frosting

I call Strawberry Lemonade Cake. My fellow villagers love it.

But I am having a hard time trying to figure out another simple box cake, that could be modified, or

modify the tub of lemon frosting to make a unique cake for my Senior's Village Apartment complex.

I ordered the Betty Crocker tub frosting and had to get 4. I have two box lemon cakes and the strawberry cake, but I need a fourth option.

Extra info: I use butter instead of oil in my lemon, butter yellow, butter chocolate cakes. I use corn oil in my other cakes and cornbread. I use a Kitchenaid stand mixer and beat my cakes on med-high for 3 minutes. They bake up light and fluffy, moist and delicious, and they just about melt in your mouth.

How about adding almond extract to your yellow or white cake mix, then topping the frosting with coconut?

Watching tv show now — doing lemon bars & adding espresso powder both to the cake crust but akso to the lemon curd filling   I’m thinking add it to the icing & cake   One only used a couple pinches,  another what looked like 1/4-1/3 cup!  (It could have been a tablespoon used—hard to tell w/tv close ups)
