When do I become a real person? ;) It would be easier if I made
all of the cakes on one night and then assembled and decorated them the
next night. I have a fridge to store them in my school from about 6
a.m. until they will be served on the same day, but no fridge to store
them in between the night that I make them and 6 a.m. 36 hours later.
Is this ok? I plan on putting the crumb coat on the cakes as soon as
they cool, the night that I cook them, and leaving my air conditioning
on, cranked as low as it can go. I know that could dry the cakes out, but if they have a crumb coat I don't think I can wrap the cakes in plastic wrap. Any thoughts? I need to buy a chest
freezer!
The crumb coat will seal in the moisture so they will not dry out but if it makes you feel better cover them w/plastic — it wouldn’t need to be tight If they are completely decorated they do not need any covering You can box them then wrap the box but even that isn’t necessary
And there is no need to freeze yourself with the air conditioning. Just leave at set at around 70 or your usual temp and the cake will be fine.
i'm worried you're not making enough -- you are making enough yes?
and don't limit yourself to how many posts/threads either -- idk know how long it takes -- some of us say 30 day idk
and if you want to follow all your threads -- just click on your name and it will take you to a concise list
