Ugh Where Did I Go Wrong

I baked a three layer 8" round yesterday.  client complained that cake was dry and clumpy she said that it also had little chunks in it that was gummy and when u bit it it had the texture of a gummy bear. Ive rattled my brain all night trying to think what I did and cant think of anything different except I did add and few drops of lemon emulsion to the simple syrup before putting on the top of each layer. but I cant think how that could of made that kind of difference. please help if you know anything I don't want that to happen again... embarrassing

I suggest you have the client return any remaining cake.  I don't know how a cake could be both dry and have gummy chunks in it???  I could understand dry - maybe over baked, and I could understand clumps - perhaps under mixed, but it really does should a little...., well, not right.

could it be egg yolk that didn't get fully mixed in perhaps -- that's the only thing i can think of without knowing what kind of cake it is -- or if the filling had egg yolks like a lemon curd maybe?

It is really hard to say what could have gone wrong -- IF indeed there was anything wrong.   Like Sandra said, have any remaining cake returned so you can see and tell exactly what the problem is.  Then, and only then can you deciede if any refund is worthy.   OR did you cut off any of the cake to level it that you cn taste?
