Hey all recently was asked to make a egg and nut free cake, never made one before so I did a practice one, found a recipe online with good reviews, followed it as it said, when it cooled the top and sides went quite hard and when I tried to trim it, it started to crack, carried on and put buttercream on it, when I cut into it the it again started to crumble and was a bit of a mess by the end. Has anyone else got another recipe I could try or and tips please.

I haven't used it but aquafaba -- the liquid in a can of chick peas -- can be a replacement for egg white -- so I found this recipe but again I haven't tried it -- but there are some great vegan bakers on here who will surley pipe up also

also you want to check your oven temperature too --- get an oven thermometer
and some xanthan gums are made from egg white so be advised of that as well

I have used aquafaba many times as egg replacer and for icing. I just use my regular cake recipe and swap auqafaba for the eggs. Here’s a good site with info

Have you looked at wacky cake recipes? They were developed during the depression, and don't use eggs or dairy. There are quite a few with good reviews. Here's an example https://www.allrecipes.com/recipe/8389/wacky-cake-viii/
The Wacky Cake link mentioned here on AllRecipes.com is a good one. A poster recommends adjustments for a white cake version in comments.
Hint: To test for doneness - cake is done if toothpick inserted in middle comes out with moist crumbs attached - no wet batter. If you wait for it to come out dry, your cake edges will be hard.
I am vegan, and have developed a vanilla cake recipe that is as good, if not better than my non vegan recipe. It uses vegan eggs "veganEgg" powder which I get at Lucky's (Northern California) and have also purchased on Amazon. It has been virtually foolproof for me, and not at all finicky. There are other egg substitutes that probably work well also, but can't vouch for until I try. I also have a great vegan chocolate cake recipe that requires no "binders".
