Broken Ganache

My fifteen year old asked for a "death by chocolate" ice cream cake for her birthday this year.  My plan was to cover it in whipped ganache.  I got in a hurry and tried to cool the ganache too quickly before whipping it and it broke spectacularly.  I reheated and stirred it back to submission over a double boiler, let it cool more slowly and tried again.  It never would whip up to a pipeable consistency.  I ended up pouring it over and covering the top with crushed oreos.  It was quite possibly the ugliest cake I've ever made, but the kids enjoy it anyway.  Any tips for next time?
