I have a 4 tiered wedding cake to bake for Saturday. I am planning to wrap the cake in fondant 24 hours prior to the event. Is it safe to keep it at room temperature for so long? It is going to be an eggless cake. I have heard that the fondant wrapped cake turns out to have a sour taste if kept out at room temperature for too long. Is it true?

no, a fondant cake will not go weird in a few days at all -- will be fine for a couple weeks probably -- I mean saturday is tomorrow -- this is your first one maybe? go for it -- start now 

most decorators would be comfortable covering in fondant a couple days before -- no worries

I have never heard of cake going sour in just 24 hrs - but then I have never made an eggless one.  Many, many cakes covered in fondant, many of them kept at room temp as long as 3 days not any of them went sour.
