I have a graduation ruffle cake to make for next Friday delivery. 

How early can I frost? Is Monday or Tuesday too early??

Also, any good frosting advice. It will be my first ruffle cake and latley my my frosting has not been turning out good.

For the most part cakes stay fresh for 3 days   Depending on the icing & filling used You could freeze it   If you have room to the best way to proceed is to put the finished cake in the fzr UNcovered for 1-2 hrs; once it’s hardened take it out & wrap well in plastic wrap 2-3 layers & put in cake box   When you take it out remove the plastic wrap but put the still fzn cake back in the box to defrost in the fridge   Overnight is best or at least 4-5 hrs, leaving in box then take out to come to room temp, again still in the box.  All that  helps prevent sweating problems

Oh-a Good frosting recipe is “2of every thing “ found in the recipe section   It can be made as a crusting or non-crusting.  For your ruffle cake I suggest using it in crusting form
