I have an order this week. My customer wants to order a dozen cupcakes to pick up Thursday. But the party is Saturday. What should I do to keep the cupcakes fresh. And should she keep them in the fridge or at room temperature? It's vanilla cupcakes with American buttercream.

Thank you.

Oh boy- make them as late as possible on Thursday, I guess...because although I tend to leave my cakes (not the ones for customers) with ABC out on the counter covered for a day or two, she would need to refrigerate them I would say, just to be on the safe side.  Then take them out an hour or two before the party so they get back to room temperature.

good luck!

Make sure all exposed cake (not in a liner) is covered w/icing.  This can be a very thin cover or lots of icing piled up :)  Once done, box them and place in a plastic bag, then into the fzr.
Best way for sure.
