I am trying to model the Tin Mans head from Oz, I made a RKT Oval then covered in modeling chocolate. My question is do I press out the shape in the modeling chocolate or do i wait until  i put fondant on to start working the facial features. 


Also, how can I keep it pliant over a period of days whilebinworknonnit

There is no need to cover it with fondant if you are using modeling chocolate.  If you want to cover it with fondant, however, you should model the details into the modeling chocolate, then cover with fondant and just follow the contours which you have created.
