Hello,

I am new to this site.  I will be making a half-sheet cake for the first time.  My fridge is not big enough for a cake that big, though.   Do I need to refrigerate the cake after I put the crumb coat on?  I am also concerned about leaving the cake out overnight, as I will be decorating it the day before the event.  I would like to fill it with either a mousse or buttercream, and frost/decorate with an Italian buttercream.  The event is in April, so I have time to plan this out.

The cake should be chilled for a final coat, and with perishable fillings, it will need to be refrigerated.

I did 98% of my decorating in ABC (not Italian BC)  and never frig’d my cakes   You don’t have to frig if you use b’cteam  but will if you use mousse   There is no problem leaving a cake sit at room temp for a day or two

Forgot to say as long as the cake is crumb-coated it will not dry out so it is safe to sit out overnight
