I am throwing my husband a surprise birthday party on Sunday and am making a carved bass fish cake for it. Obviously secretly making this rather large and complicated cake at home is proving to be a challenge in sneakiness! My question is when is the absolute earliest I can cover the cake in fondant and it be fresh for Saturday. I have to do all my work when he isn’t home AND when my toddler is asleep so I need all the time I can get!

Most decorators concider a cake fresh  for 3days at room temp   Many of us freeze them for more freshment time   Fondant cakes can be fzn   Personally I would do it only the 3 days in advance    Good luck in pulling off your surprise

Ditto what kakeladi said.  If you can't freeze the cake, wrapping it well and keeping it in the refrigerator will help, also.
