I have been baking a while but have had an unusual circumstance arise, at least unusual for my normal process! Long story short, I have to bake and decorate a two tier cake that is covered in buttercream, and has some fondant decorations on the top and sides. Because of unavoidable circumstances, I will have to do the whole process on Friday, but the cake won’t be served til Monday. I plan to refrigerate it upon completion. Should I let the cake get to room temp by sitting out of the fridge Sunday night? Or take it out the morning of? I see conflicting answers to the whole fondant-in-the-fridge thing! I’m nervous to wait til the morning of because I’m afriad it will still be cold when served (I don’t want it to be hard since it’ll be a few days old by then). But I’m nervous to take it out the night before because of I’m afraid the fondant decorations will fall off, or the cake settles weird, or otherwise messes up. Help!!

Thanks in advance!!

No problem letting it sit out overnight but it’s also o.k to take it out in the morning  It will come to room temp w/in about an hour   If you attach the decorations by piping an open circle ⭕️ On back w/a small tip there should be no problems with it falling off     I suggest you freeze instead of frig’ing   Place it in a cake box that is placed in a plastic bag.  Then take out the night before & let sit inthe cake box unopened overnight to prevent problems   I’ve Done that for years;)

Ditto what kakeladi said!  Freezing will keep the cake as fresh as just baked.
