Help!!! Mascarpone Frosting...can You Freeze?

Hi All!

I’m in need of some advice. I made a fairly large batch of mascarpone cheese frosting for a cake and cupcakes this weekend. They just moved the event to March 2nd due to weather!

 just test a spoonful over night in the freezer and see how it does

y'know then thaw it out tomorrow and if it doesn't get weepy and separate then you're good -- is this the kind made with whipped cream? most people don't whip their whipped cream enough so it won't work if the whipped cream is too loose --

It’s mascarpone cheese, powdered sugar, heavy whipping cream and vanilla extract

I've never frozen frosting made with mascarpone, but I have frozen cream cheese frosting and it was fine.

Yup- you can totally freeze it. Love that stuff! Not as sweet but without the cream cheese zing some people don’t like :).

Thanks everyone! I wrapped up the bowl with Saran Wrap and put it in the freezer! Fingers crossed! :)
