Making A Cake 4 Days In Advance

Hi all, 

I've been baking cakes for years but have always been a little unsure of how far in advance I can get away with baking a cake. I've been asked to make a one tier rainbow layer cake, covered in buttercream and chocolate drip, to be collected on Saturday and eaten on Sunday. I have two small children who go to a childminder on a Wednesday so in an ideal world I could bake the cake on the Wednesday and cover in cling film, keep it at room temperature until Friday when I would buttercream it and decorate, ready for collection on Saturday. Would this work - and be fresh enough for eating on the Sunday?

Why not wrap the layers in plastic wrap and keep them in the refrigerator?  They should be plenty fresh.

You would be better off wrapping it up and freezing it   Would be better-fresher   for the customer   Take it out Thursday night or Friday morning to work on
