Hi friends! what do you use? Ganache or Buttercream? In this video tutorial I cover a cake with both frostings...but I do prefer Ganache, what about you?

I have fallen in love with ganache, too!  So much more stable in the hot, humid South than buttercream.  Wonderful tutorial for anyone trying to learn to finish a straight, smooth cake.  I've watched it twice, lol!

Since I  did most of my decorating back in the '80's and '90's I did know about ganache - therefore all of my crumb coating and finished icing was b'cream.  When I finally ventured into fondant work I still used b'cream as my crumb coating.  Have never made or used ganache.

I was afraid of it, kakeladi, so only tried it for the first time about a year ago.  It is not hard to work with at all and it makes your cake very sturdy.  Since it is almost pure chocolate, most people really like the taste, too.  I personally prefer white chocolate ganache.
