Buttercream Icing.

So I’m completely knew to making my own icing and so far, I’ve completely fail lol. I don’t have a stand mixer. I tried basic butter cream recipes but it comes out looking like cottage cheese because the butter is separated! Ive tried keeping the bowl cool with ice, different recipes too. I’ve failed the no fail

Give it a try.  It is a bit hard on a hand-help mixer because of the amount of time needed for the best results but you could cut down the time at the end some.  You also could rest the mixer (maybe 5miinutes) after each step.

I'm wondering if it's the butter you are using.   Maybe a different brand is needed?

I've made a million batches of buttercream with a hand mixer without a problem.  Of course, they were sized for a one tier, 8" or 9" cake, so not a huge volume.  You need for you butter to be room temperature, not chilled.  It sounds to me like your butter is too cold, so does not melt enough to properly blend with the sugar.  Start by beating your room temperature butter until it is light in color and fluffy, then start adding the sugar, adding water (or milk or cream or juice, any liquid) a tablespoon at a time to get the proper consistency.
