Hi Everyone,

I have a request for the below PJ Mask cake, I've only ever made 2 fondant cakes before and would love some advice on the following:

The party is on Sunday, customer requested the cake for Saturday, However - I'm only able to deliver on Friday. I'm going to be using the WASC recipe from here, so I'm hoping that it'll stay fresh enough?

I would normally bake the cake Wednesday night to let it settle, Thursday I would fill and ganache, then Friday decorate with fondant and drop to the customer. I'm concerned baking the cake Wednesday for Sunday is way too long, so does anyone have a different plan that would work?

I'm just worried about the resting time, to avoid having bubbles or bulges. Maybe I could bake the cake and freeze it, bring it out Thursday, to fill and frost, Friday decorate?

I'm also located in Australia, where the weather will be 32C this weekend, - I'll be using a small amount of american buttercream/jam inside, with a ganache crumb coat. Will my cake be ok out of the fridge for this duration?

Baking your cakes on Wednesday for a Sunday party is pushing it, but if you keep it refrigerated and well wrapped, it should be fine.  I never leave my cakes at room temperature, not because it can't be done, just habit I guess.

As Sandra said, that is just a bit longer than I recommend.   There is no 'wiggle room' for any leftovers the customer might have.  Go ahead and bake tomorrow and fz. then bring it out Thursday night into the frig to defrost so it will be ready  to fill, frost & decorate Friday.
