My Cupcakes Keep Sinking

I've been baking for years but this recipe is my nemesis.  It is a simple recipe;  flour, sugar, baking powder,  shortening and milk. I've stood beside my friend and watched her a she made these delicious and beautiful cupcakes numerous times,  but my fail everytime.  I've tried using cake flour, self rising flour ( leaving off the baking powder in the recipe), using shortening vs. oil, cupcakes vs. cakes, stand mixer/hand mixer/ stirring, and temp adjustment. It's not the oven because this is the 3rd oven I've attempted them in and my friend succeeded with the same oven I failed. Any and all suggestions are greatly appreciated!!

Do you open the oven to check on them? That could cause them to fall.

You are NOT holding your tongue right!!  HAHAHA    Sorry Ihave no idea except mayby try turning the oven dow and bake a few minutes longer.   When you say they sink how do you mean.......like a small dip in the center while they cool or BIG sink?   Are they cook through in the middle?  I'm having a hard time imagining how bad they are.   Do they taste o.k. and it's just a small dip in the center that can be easily covered w/icing?

Don't overfill your cupcake liners. Also, start your ovn off high. Say 400 and then lower to 350 once you put the cupcakes in. This will help the sides climb. Dont open your oven.
